Coach Heather often substitutes dried thyme or fresh chopped rosemary for the dill, the variations are endless!

Ingredients
- 1 cup 2% cottage cheese
- 1 package (1.4 ounce rapid-rise yeast
- 1/2 cup warm water
- 1/2 teaspoon sugar
- 2 tablespoons unsalted butter, softened
- 1/4 cup minced yellow onion
- 1 large egg
- 1 tablespoon dried dill
- 1 3/4 cups all-purpose unbleached flour, divided
- 1 cup vital wheat gluten (flour)
- 1 teaspoon salt

Instructions
- Heat the cottage cheese in the microwave on high power 30 seconds to 1 minute or in a small saucepan over medium heat, just until warm to the touch. Transfer to a large mixing bowl and stir in the yeast, water, sugar, butter, onion, egg and dill. Stir until well mixed.
- In another bowl, whisk together 1 1/2 cups flour, the wheat gluten and salt. Stir the flour into the wet ingredients, adding 1/4 cup at a time until it forms a stiff dough. Sprinkle the remaining 1/4 cup all-purpose flour on a cutting board and knead the dough until no longer sticky, about 5 minutes.
- Spray a large mixing bowl with nonstick spray and transfer the dough to the bowl. Cover with a clean kitchen towel and let the dough rise in a warm place until almost double in size, about 1 hour.
- Preheat the oven to 350°F. Spray a standard-sized loaf pan with nonstick spray.
- Punch the dough down and form into a loaf. Place seam side down in the pan and let rise 20 to 30 minutes longer. Bake until nicely browned, about 40 minutes. Let cool and cut crosswise into 10 slices.
Tips
- You can substitute 2 tablespoons chopped fresh dill in place of dried dill.
- If you have a food processor, you can make this bread very quickly. Just combine all the wet ingredients and process together, then, add the flours, process and knead until well combined.

- You can leave the dill and onion out of this recipe to have a basic bread. Yum, yum!
