Pasta with Pumpkin Sauce and Chicken Sausage

This easy pasta recipe uses lots of great short cuts, like frozen pepper strips and pumpkin pie spice. If you don't have those on hand feel free to substitute.

Instructions

  1. Cook pasta according to directions, adding broccoli florets 3-4 minutes before pasta is done. Cook until pasta is al dente.
  2. Meanwhile in large skillet, cook sausage and peppers until browned and cooked through, drain off any fat or liquids. Stir in pumpkin pie spice, and cook for 1 minute. Stir in evaporated milk and canned pumpkin. Bring to a simmer and cook for 1-2 minutes longer or until thicken slightly.
  3. Drain pasta and broccoli, add to skillet with sauce. Toss to combine. Season to taste with salt and pepper.
