A one-dish meal that's super simple and full of flavor. Julie says even her picky kids love it!

Ingredients
- 1 cup 2% Greek-style yogurt (higher in protein than carbs)
- 1 red bell pepper, chopped
- 1-15 ounce can diced tomatoes
- 1-15 ounce can garbanzo beans, drained
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 garlic clove, chopped
- 4-3 ounce boneless, skinless chicken breasts
- kosher salt and freshly ground black pepper
- red pepper flakes, to taste
Instructions
- Preheat oven to 400 degrees In a medium bowl, mix yogurt, peppers, tomatoes, garbanzo beans, spices and garlic until well combined. Place chicken on a baking sheet. Sprinkle with salt, pepper and chili flakes. Pour the yogurt mixture over and around the chicken.
- Bake chicken until cooked through, about 30 minutes. Divide chicken and sauce between 4 plates and serve.
Tips
- This would be delicious served with Braised Chard and Red Onion.
