Gingerbread Pudding

A traditional family favorite K- balanced just for you.

Instructions

  1. Preheat the oven to 350.
  2. Slice the prepared gingerbread into cubes and set aside.
  3. Saute the apples and brown sugar in the butter. Remove from heat and set aside.
  4. In a large mixing bowl combine the egg whites, whole eggs, milk, Splenda, vanilla, whey protein, and cinnamon. Beat well.
  5. In a 9X13 inch pan layer the cubed gingerbread and the apple mixture. Pour the egg mixture over the bread and apple mixture. Allow to stand for 15 minutes.
  6. Place the pan with the bread pudding mixture into a larger pan and fill that pan with water to create a water bath. Fill the water within 1 inch of the top of the bread pudding pan. Place in the oven for 70 minutes or until a knife comes out clean.

  • this was okay - I was hoping for more sauce. It tastes a lot like the gingerbread muffins (which I love) Don't get me wrong, it tasted fine, just not worth the extra effort in my opinion

  • For a chocolate lovers variation, replace the butter, apple and brown sugar with 3 ounces of semi sweet mini chocolate chips. Serve warm....YUM!!! The K-Count remains the same.
