A traditional family favorite K- balanced just for you.
- Preparation Time: 25 minutes

Ingredients
- 1 batch Kinetix Gingerbread Muffins
- 1 1/2 tablespoons unsalted butter
- 1 large apple, peeled and diced
- 1/4 cup brown sugar
- 7 egg whites
- 2 whole eggs
- 2 cups nonfat milk
- 1/2 cup Splenda
- 1 tablespoon vanilla extract
- 2 ounces vanilla whey powder
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 350.
- Slice the prepared gingerbread into cubes and set aside.
- Saute the apples and brown sugar in the butter. Remove from heat and set aside.
- In a large mixing bowl combine the egg whites, whole eggs, milk, Splenda, vanilla, whey protein, and cinnamon. Beat well.
- In a 9X13 inch pan layer the cubed gingerbread and the apple mixture. Pour the egg mixture over the bread and apple mixture. Allow to stand for 15 minutes.
- Place the pan with the bread pudding mixture into a larger pan and fill that pan with water to create a water bath. Fill the water within 1 inch of the top of the bread pudding pan. Place in the oven for 70 minutes or until a knife comes out clean.
Tips
- If you are using Stevia instead of Splenda, use 1 teaspoon of Stevia.
- This recipe needs a total of 42-44 grams of protein coming from whey protein. Choose the brand you like accordingly.

- this was okay - I was hoping for more sauce. It tastes a lot like the gingerbread muffins (which I love) Don't get me wrong, it tasted fine, just not worth the extra effort in my opinion

- For a chocolate lovers variation, replace the butter, apple and brown sugar with 3 ounces of semi sweet mini chocolate chips. Serve warm....YUM!!! The K-Count remains the same.
