Ingredients
- 1/2 cup jasmine rice
- 1 cup water
- salt
- 1 1/2 pounds extra-firm tofu, cut into 1/4-inch pieces
- 4 celery stalks, thinly sliced on the diagonal
- 1-2 tablespoons unseasoned rice wine vinegar
- 1 tablespoon soy sauce
- 1/2 teaspoon sesame oil
- 1 teaspoon toasted sesame seeds
Instructions
- In a small saucepan, bring the rice, water and salt to taste to a boil over high heat. Lower to a simmer and cook until the rice is done, about 15 minutes. Let stand off the heat for 5 minutes, then scoop the rice into a large bowl.
- Add the remaining ingredients except the sesame seeds, toss to mix and divide between 4 bowls. Sprinkle with the sesame seeds and serve.

- I made a few changes, but this salad was great! 1) To 'beef up' the rice portion, i graded zucchini and finely chopped the celery and mixed that with the rice. 2) I used about 1/2 the celery, it looked like a lot for the amount of rice 3) I put the whole salad on a bed of spinach. 4) I also marinaded the tofu in soy and grilled it a bit before serving. It was easy! I'll make this again!

- Feel free to add lots of crispy K0 veggies like- green onion, red, yellow, or orange peppers, daikon radish, and sprouts.
