A combination of onion, spices and salt and pepper makes a great topping for salmon. If you’re grilling the salmon, make sure the grill is well-oiled or the topping will stick.
- Preparation Time: 10 minutes
- Cooking Time: 10 minutes
- Total Time: 20 minutes
- Servings: 4
Ingredients
- 1/2 cup chopped yellow onion
- 4 garlic cloves, divided
- 2 teaspoon cumin
- 2 teaspoon ground coriander
- pinch cayenne
- salt and ground black pepper
- 1 1/4 pounds skin-on salmon fillet
- 1 cup nonfat greek style yogurt
- 1/4 cup chopped cilantro
- 1 tablespoon red wine vinegar
- 8 scallions, trimmed and left whole
- 4 6-inch pita bread
Instructions
- Preheat a broiler or grill. In a blender or food processor, combine the onion, 3 cloves garlic, cumin, coriander, cayenne and salt and pepper to taste and process until smooth. Spread over the flesh-side of the salmon and let stand while the broiler or grill heats up.
- In a medium bowl combine the yogurt, cilantro and vinegar. Mince the remaining garlic clove and stir in along with salt and pepper to taste.
- Place the salmon on a baking sheet and broil the salmon, rub side up for 8 to 10 minutes. If grilling, grill on a well-oiled grill for 5 minutes. Turn and grill another 4 to 5 minutes or until done to your liking. At the same time, broil or grill the scallions until tender and browned, about 5 minutes. Broil or grill the pita breads about 2 minutes total. Serve with the yogurt sauce.
