This Argentinean-inspired rub is a flavor-booster to boneless, skinless chicken breasts.

Ingredients
- 1 teaspoon kosher salt or sea salt
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon red pepper flakes
- 1/2 teaspoon ground black pepper
- 1 pound boneless, skinless chicken breasts
- 1 tablespoon extra virgin olive oil
- 1 teaspoon red wine vinegar
- 1 red onion, cut into 1/2-inch slices
- 4-2 ounce rolls
Instructions
- Light a grill or preheat a broiler. In a small bowl stir together the salt, paprika, garlic powder, oregano, thyme, red pepper flakes and black pepper. Rub the chicken with both sides and set aside.
- Brush the chicken and red onion slices with the olive oil, sprinkle the onion with salt and pepper and place on the grill. Grill the chicken 4 to 5 minutes per side, the onions for 2 to 3 minutes per side. Remove to a platter and sprinkle with the vinegar. Serve with the rolls.

- Man, all food should be this good... there's a lot of heat from the spices... may not be appropriate for those with a sensitive palate - you can tone down the garlic, paprika and crushed red chili and you'll probably be ok.
