Grilled Chimichurri Rubbed Chicken

This Argentinean-inspired rub is a flavor-booster to boneless, skinless chicken breasts.

  1. Light a grill or preheat a broiler. In a small bowl stir together the salt, paprika, garlic powder, oregano, thyme, red pepper flakes and black pepper. Rub the chicken with both sides and set aside.
  2. Brush the chicken and red onion slices with the olive oil, sprinkle the onion with salt and pepper and place on the grill. Grill the chicken 4 to 5 minutes per side, the onions for 2 to 3 minutes per side. Remove to a platter and sprinkle with the vinegar. Serve with the rolls.

  • Man, all food should be this good... there's a lot of heat from the spices... may not be appropriate for those with a sensitive palate - you can tone down the garlic, paprika and crushed red chili and you'll probably be ok.
