This fast noodle and steak dish is super easy and a great way to have Asian food without doing takeout!
- Preparation Time: 10 minutes
- Cooking Time: 10 minutes
- Total Time: 20 minutes
- Servings: 4
Ingredients
- 4 teaspoon minced garlic
- 3 teaspoons minced ginger
- 1 pound flank steak
- 1/4 pound stemmed shitake mushroom caps
- salt
- 8 ounces Asian pasta style noodles
- 1/4 pound snow peas
- 1/4 cup reduced-sodium chicken broth
- 1 1/2 tablespoons reduced-sodium soy sauce
- 1 tablespoon unseasoned rice wine vinegar
- 2 scallions, thinly sliced
- 1/2 cup cilantro leaves
Instructions
- Preheat a gas grill or broiler. Stir together 2 teaspoons each of the garlic and ginger and rub over the steak. Sprinkle both the steak and mushrooms with salt. Grill steak over high heat until medium-rare, turning once, about 10 minutes total. Grill mushrooms until browned, about 5 minutes. Remove both to a cutting board and let stand covered.
- Meanwhile, bring a large pot of salted water to a boil and cook the noodles until just tender, about 6-9 minutes. Add snow peas and drain. Divide noodles and snow peas between 4 large bowls.
- While the noodles are cooking, warm the broth, soy, vinegar and remaining garlic and ginger in a small saucepan. Pour over the noodles dividing evenly. Thinly slice the steak and mushrooms and place on top. Sprinkle with the scallions and cilantro and serve.

- This is excellent. I sometimes add some red pepper flakes to the meat to give it kick.
