Flavor chicken breasts with a soy, apricot glaze and make a simple lemon, caper couscous. Couldn't be easier!

Ingredients
- 2 tablespoons low-sugar apricot jam
- 1 tablespoon reduced-sodium soy sauce
- 2 tablespoons unsalted butter, divided
- 1 pound boneless, skinless chicken breast
- salt and ground black pepper
- 1 1/4 cups low-sodium chicken broth
- 2 tablespoons capers, rinsed
- 1 tablespoon grated lemon zest
- 1 cup couscous
- Pinch cayenne
Instructions
- Preheat the broiler to high. In a small microwaveable dish, combine the jam, soy sauce and 1 tablespoon of the butter and microwave 30 seconds. Stir together until the butter melts. Sprinkle the chicken with salt and pepper, brush with the apricot mixture and broil on a foil-lined baking sheet for 5 minutes. Turn and brush several times with the apricot mixture and broil until cooked through about 4 to 5 minutes longer.
- Meanwhile, put the couscous in a bowl. Bring the broth, remaining tablespoon of butter, capers and lemon zest and bring to a boil in a medium saucepan. Pour over the couscous, cover and let stand 5 minutes. Season with salt and pepper and cayenne, stir and serve with the chicken.
Tips
- To make this recipe dairy free, use a trans fat free spread or olive oil instead of butter.

- The family really liked the chicken, but not the couscous. what could I substitute to keep it k balanced?

- would put the sauce on afterwards as you could barely taste it after cooking the chicken, but chicken goes great with the delicious twist on couscous.
