A favorite at Kinetix events, we like to serve it in take-out containers.

Ingredients
- 1/2 pound chicken breast, sliced in 1/2" pieces
- For the marinade:
- 1 tablespoon sesame oil
- 2 tablespoons grated ginger
- 1 lime, juiced
- 1 tablespoon fish sauce
- 3 tablespoons brown sugar
- 1/4 cup low-sodium soy sauce
- 1 1/2 tablespoons hot chili sauce
- 1 teaspoon five-spice powder
- 2 green onions, thinly sliced on the diagonal
- 1/2 cup sliced red bell pepper
- 1 cup sliced mango
- 1/4 cup chopped cilantro
- butter lettuce leaves
Instructions
- Marinate the chicken: In a large bowl whisk together the marinade ingredients (sesame oil through 5-spice powder). Add the sliced chicken and combine throughly to coat. Refrigerate for a minimum of 15 minutes or up to 1 hour.
- Preheat the broiler or heat a grillpan.
- Remove chicken from marinade. If broiling place the chicken on a broiling pan and broil 3 inches from the heat source for 4 minutes. Turn and broil 2 to 3 minutes longer or until firm to the touch. If using a grillpan, spray lightly with cooking spray. Cool chicken.
- In a large mixing bowl, combine the green onions, bell peppers, mango and cilantro. Add the cooled chicken, toss to combine and refrigerate until ready to serve.
- To serve, arrange butter lettuce leaves on plates and evenly divide the chicken salad between.
Tips
- Looking for a shortcut? Chicken tenders are a great substitute for slicing chicken breast yourself.
