This baked ziti is a great vegetarian entree.

Ingredients
- 2 medium zucchini, diced
- cooking spray
- salt and ground black pepper
- 8 ounces ziti
- 3 garlic cloves, minced
- 4 scallions, thinly sliced
- Pinch red pepper flakes
- 12 ounces veggie crumbles
- 2 cups tomato sauce
- 1 1/2 cups part-skim ricotta cheese
- 1 1/2 cups 2% cottage cheese
- 1 large egg white
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil leaves
- 1 cup shredded part-skim mozzarella
Instructions
- Preheat the oven to 500°F. Line a small cookie sheet with parchment and spread the zucchini over it. Lightly spray with the cooking spray and sprinkle with salt and pepper to taste. Roast until softened and lightly browned, about 10 minutes. Set aside. Lower the heat to 375°F.
- Meanwhile, bring a large pot of salted water to a boil and add the pasta. Cook until al dente about 8 minutes and drain well. Set aside.
- While the pasta and zucchini are cooking, spray a large nonstick skillet with cooking spray and warm over medium-high heat. Add the garlic, scallions and red pepper flakes and cook 30 seconds. Add the veggie meat and tomato sauce and cook, stirring for 3 minutes or until warmed through. Season with salt and pepper. When the pasta is drained, stir into the skillet.
- In a medium bowl, stir together the ricotta, cottage cheese, egg white, Parmesan cheese and basil. Place half the ziti in a 9 X13-inch baking pan and cover with the cheese mixture and zucchini. Top with the remaining ziti and the mozzarella. Bake uncovered until hot and bubbling about 30 to 35 minutes.
