Ingredients
- 2/3 cup jasmine rice
- 1 cup water
- pinch salt
- 1/2 cup hoisin sauce
- 2 tablespoons lime juice
- 2 tablespoons reduced-sodium soy sauce
- 1 1/4 pounds boneless, skinless chicken breast
- 2 teaspoons sesame oil
- 2 garlic cloves, minced
- 1 tablespoon minced fresh ginger
- 1 package (16 ounces frozen stir-fry vegetables
Instructions
- Preheat the broiler. In a small saucepan bring the rice, water and salt to a boil over high heat. Lower to a simmer, cover and cook 15 minutes or until the rice is cooked and the water is absorbed. Set aside covered.
- Meanwhile, combine the hoisin, lime and soy in a small bowl. Place the chicken on a foil-covered baking sheet and brush with half the hoisin mixture. Broil 3 inches from the heat source until the chicken is cooked, about 10 to 12 minutes.
- At the same time, heat the sesame oil in a large non-stick skillet over high heat. Add the ginger and garlic and cook 30 seconds. Add the vegetables and remaining hoisin sauce and cook until heated through, about 4 to 5 minutes. Serve with 1/2 cup of the rice and the chicken.
