Ingredients
- 1 medium English cucumber, halved lengthwise and thinly sliced
- 3 celery stalks, thinly sliced
- 5 medium radishes, cut in half and thinly sliced
- 2 tablespoons rice wine vinegar (unseasoned)
- 1 1/2 teaspoons kosher salt or sea salt
- 1/4 teaspoon ground black pepper
Instructions
- In a medium serving bowl, combine the cucumber, celery, radishes, vinegar, salt, pepper, and vinegar. Let stand at room temperature for 10 minutes.
- Variation: Stir in 1 tablespoon minced shallot.
Tips
- Using a seedless, hothouse cuke (also called English) in this salad will really cut down on your kitchen time. There’s no peeling or seeding, and they have a much better flavor than most supermarket cucumbers.

- This is a great salad! It's easy to prepare and tastes great. Nothing beats fresh cucumber!
