Ingredients
- 1 mango, diced
- 1/3 cup diced red onion
- 1/2 cup cucumber, peeled, seeded and diced
- 2 tablespoons fresh lime juice
- 1/2 teaspoon grated lemon zest
- 1/4 teaspoon ground cumin
- black pepper, to taste
- 4 teaspoons fresh lime juice
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon salt
- 1 teaspoon ground cumin
- 4- medium ears white corn, husks still on
- 1 pound halibut, cut into 4 ounce filets
Instructions
- Preheat grill to high heat.
- For Salsa: mix together mango, red onion, cucumber, lime juice, zest and spices. Let sit to combine flavors.
- Meanwhile, mix lime juice, olive oil, salt and cumin in a small bowl. Carefully peel back husks on corn and remove silk. With hands, rub the cumin mixture into corn and replace husks.
- Grill corn for about 10 minutes, turning often. While corn continues to cook, season halibut with salt and pepper to taste and grill about 3 minutes per side or until no longer translucent.
- Serve halibut topped with fresh salsa.
Tips
- Corn can be prepared in the microwave and the halibut broiled on rainy days.
