Grilled Halibut with White Corn and Fresh Salsa

  1. Preheat grill to high heat.
  2. For Salsa: mix together mango, red onion, cucumber, lime juice, zest and spices. Let sit to combine flavors.
  3. Meanwhile, mix lime juice, olive oil, salt and cumin in a small bowl. Carefully peel back husks on corn and remove silk. With hands, rub the cumin mixture into corn and replace husks.
  4. Grill corn for about 10 minutes, turning often. While corn continues to cook, season halibut with salt and pepper to taste and grill about 3 minutes per side or until no longer translucent.
  5. Serve halibut topped with fresh salsa.
