Grilled Cilantro Chicken with Mango Salsa

  1. In a small saucepan bring the rice, water and 1/4 teaspoon salt to a boil over high heat. Cover and simmer until the water is absorbed and rice is cooked about 40 minutes.
  2. Meanwhile, combine the remaining salt, 2 tablespoons cilantro, garlic, 1 1/2 tablespoons lime juice, honey, olive oil and pepper in a non-reactive pie plate or shallow dish. Add the chicken and turn to coat. Let stand while preparing the salsa.
  3. Preheat the grill or broiler.
  4. Combine the mango, remaining lime juice, remaining 1/4 cup cilantro, red onion and jalapeño. Season with salt and pepper.
  5. Grill or broil the chicken until just cooked through, about 3 to 5 minutes.
