Ingredients
- 2/3 cup brown rice
- 1 1/3 cups water
- 1/2 teaspoon kosher salt or sea salt, divided
- 6 tablespoons cilantro, chopped, divided
- 2 garlic cloves, minced
- 3 tablespoons lime juice, divided
- 1 tablespoon honey
- 1 tablespoon extra virgin olive oil
- 1/4 teaspoon ground black pepper
- 1 pound boneless, skinless chicken breast, cut into 1/2-inch thick cutlets
- 1 mango, skinned and finely diced
- 1/4 finely diced red onion
- 1 teaspoon minced jalapeño
Instructions
- In a small saucepan bring the rice, water and 1/4 teaspoon salt to a boil over high heat. Cover and simmer until the water is absorbed and rice is cooked about 40 minutes.
- Meanwhile, combine the remaining salt, 2 tablespoons cilantro, garlic, 1 1/2 tablespoons lime juice, honey, olive oil and pepper in a non-reactive pie plate or shallow dish. Add the chicken and turn to coat. Let stand while preparing the salsa.
- Preheat the grill or broiler.
- Combine the mango, remaining lime juice, remaining 1/4 cup cilantro, red onion and jalapeño. Season with salt and pepper.
- Grill or broil the chicken until just cooked through, about 3 to 5 minutes.
