Ingredients
- 2 ounces low-sodium deli ham, diced
- 1/2 cup sliced mushrooms
- 1/2 cup sliced green bell pepper
- 1 scallion, thinly sliced
- 5 egg whites
- 1 whole egg
- salt, to taste
- ground black pepper, to taste
- 1/2 cup blueberries
- 1 medium peach, sliced
Instructions
- Spray a medium pan with nonstick cooking spray and warm over medium heat. Add the ham and brown for about 2 minutes. Add the mushrooms, green peppers and scallion and cook stirring, until softened about 1 minute.
- Meanwhile, in a small bowl, whisk together the egg whites and whole egg and season with salt and pepper to taste.
- Add the eggs to the pan and cook, stirring frequently until cooked as desired. Combine the blueberries and sliced peaches in a bowl. Serve alongside the scrambled eggs.
