Ingredients
- 1/2 teaspoon canola oil
- 1 medium onion, diced
- 1/2 pound mushrooms, sliced
- 12 ounces high-protein tofu, crumbled
- 2 tablespoons low-sodium soy sauce
- ground black pepper, to taste
- 2 tablespoons green onions, thinly sliced
- 2 slices whole-wheat bread, toasted
Instructions
- Heat the oil in a medium nonstick skillet over medium-high heat. Add the onion and cook, stirring, until browned, about 8 minutes. Add the mushrooms and cook until mushrooms are tender, about 5 minutes. Add the tofu to the pan. Cook, stirring, until the tofu is hot, about 2to 3 minutes. Season with the soy sauce and pepper and sprinkle with green onions.
- To serve, divide the scramble onto 2 plates and add 1 slice of toast to each.

- i left the onions out and replaced it with 1 roasted red bell pepper instead. i'm sure with the onions it would have been just as tasty. yum!
