Ingredients
- 6 hard-cooked egg whites
- 2 teaspoons reduced-fat mayonnaise
- salt, to taste
- ground black pepper, to taste
- lettuce leaves, optional
- 1 large wheat tortilla
Instructions
- Chop the egg whites and place in a medium bowl. Stir in the mayonnaise and season with salt and pepper.
- Place the egg filling onto the center of the tortilla, add lettuce or arugula as desired, tuck the ends over the filling, roll up and serve.

- I thought this was a little too eggy, and tasted a little pasty with the tortilla. But still good.
