Ingredients
- 4-4 ounce boneless, skinless chicken breasts
- 1/2 cup low-sodium soy sauce
- 1 lemon, juice and zest
- 1 lime, juice and zest
- For the coleslaw
- 4 cups shredded cabbage
- 1 cup shredded carrots
- 2 green onions, sliced
- 1/2 cup fat-free plain yogurt
- 1/3 cup apple-cider vinegar
- 2 tablespoons low-fat mayonnaise
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons chopped fresh parsley
- 1/4 teaspoon sugar
- dash cayenne
- salt, to taste
- ground black pepper, to taste
- 4 whole-grain hamburger buns
Instructions
- Put the chicken breasts, soy sauce, lemon juice, lemon zest, lime juice and lime zest in a large zippered plastic bag. Close tightly, pushing out as much air as you can. Place the bag in a large bowl and marinate in the refrigerator for 30 minutes.
- Heat a barbecue or grill pan over medium heat. Drain the chicken and grill until no longer pink inside, about 5 minutes per side. (Discard the marinade.)
- While the chicken is grilling, prepare the slaw: In a large mixing bowl, combine the yogurt, vinegar, mayonnaise, cilantro, parsley, sugar, cayenne, salt and pepper; whisk well. Add the cabbage, carrots and green onions. Toss to coat well.
- To serve, evenly divide the summer slaw on both sides of the 4 buns. Place a grilled chicken breast onto one side of the bun, close the sandwich and serve.
