Grilled Citrus Chicken Sandwich

  1. Put the chicken breasts, soy sauce, lemon juice, lemon zest, lime juice and lime zest in a large zippered plastic bag. Close tightly, pushing out as much air as you can. Place the bag in a large bowl and marinate in the refrigerator for 30 minutes.
  2. Heat a barbecue or grill pan over medium heat. Drain the chicken and grill until no longer pink inside, about 5 minutes per side. (Discard the marinade.)
  3. While the chicken is grilling, prepare the slaw: In a large mixing bowl, combine the yogurt, vinegar, mayonnaise, cilantro, parsley, sugar, cayenne, salt and pepper; whisk well. Add the cabbage, carrots and green onions. Toss to coat well.
  4. To serve, evenly divide the summer slaw on both sides of the 4 buns. Place a grilled chicken breast onto one side of the bun, close the sandwich and serve.
