Coach Gerry's Chicken Adobo

This classic Filipino dish comes from Coach Gerry. A great example of how a classic family recipe can easily be K-balanced.

Instructions

  1. In a 2 quart pan combine rice and water and bring to a boil. Turn heat down to a simmer and cook for 20 minutes.
  2. In a separate pan, heat canola oil to medium high heat and brown chicken 5-10 minutes or until no longer pink. Add chopped garlic, cook 2-3 minutes more. Add remaining ingredients to the chicken and simmer, covered for 15 minutes.
  3. Serve a 1/2 cup of cooked rice with 1 thigh and about 1/2 cup of chicken breast.

  • This is a great version of the famous chicken adobo I grew up with. I love how filling it is. I add broccoli or green beans with mine, cook it all up in the crockpot over night and the meat is tender and juicy.
