This classic Filipino dish comes from Coach Gerry. A great example of how a classic family recipe can easily be K-balanced.

Ingredients
- 1 pound boneless, skinless chicken breasts, cut into 2-inch pieces
- 1/2 pound boneless, skinless chicken thighs, (4-2 ounce thighs)
- 1/2 teaspoon canola oil
- 6 garlic cloves, chopped
- 12 black peppercorns
- 1/4 cup soy sauce
- 8 dried bay leaves
- 1/4 cup white vinegar
- 1 cup dry sticky rice, preferably Calrose variety
- 2 cups water
- 1 teaspoon corn starch
- K0 vegetables
Instructions
- In a 2 quart pan combine rice and water and bring to a boil. Turn heat down to a simmer and cook for 20 minutes.
- In a separate pan, heat canola oil to medium high heat and brown chicken 5-10 minutes or until no longer pink. Add chopped garlic, cook 2-3 minutes more. Add remaining ingredients to the chicken and simmer, covered for 15 minutes.
- Serve a 1/2 cup of cooked rice with 1 thigh and about 1/2 cup of chicken breast.

- A wonderful compliment to this dish is K0 Asian Spinach.

- This is a great version of the famous chicken adobo I grew up with. I love how filling it is. I add broccoli or green beans with mine, cook it all up in the crockpot over night and the meat is tender and juicy.
