Ingredients
- cooking spray
- medium red onion, thinly sliced
- 1 to 2 tablespoons minced garlic
- 1 to 2 tablespoons minced peeled fresh ginger
- 1/4 cup reduced-sodium soy sauce
- 1 1/2 pounds crimini mushrooms, thinly sliced
- 1 teaspoon kosher salt or sea salt
- 1/4 teaspoon ground black pepper
Instructions
- Spray a large (preferably 12-inch) skillet with nonstick cooking spray and warm over medium-high heat. Add the onion and cook, stirring occasionally, until softened, about 8 minutes.
- Increase the heat to high and add the garlic, ginger, soy sauce, mushrooms, salt and pepper. Cook, stirring occasionally, until the mushrooms are tender and all the moisture is evaporated, 8 to 10 minutes. Serve 1/2 cup per person.
Tips
- Try using a combination of mushrooms. Portobello, oyster, shiitake, white button or morels would all be wonderful.
