Ingredients
- 2 cups water
- 1/2 cup brown rice
- 1/2 teaspoon salt
- cooking spray
- 2 green onions, thinly sliced
- 1 tablespoon canola oil
- 3 garlic cloves, minced
- 1 pound shrimp, shelled and deveined
- 1 teaspoon cayenne
Instructions
- Bring the water to a boil in a small pot and add the rice and salt. Reduce heat to a simmer and cook for 45 minutes.
- Spray a medium pan with nonstick cooking spray and warm over medium heat. Add the green onions and cook for 5 minutes. Add the cooked rice and heat through.
- In a small pan, heat the oil over medium heat. Add the garlic and cook for 2 minutes. Add the shrimp, sprinkle with cayenne pepper and cook until opaque and pink, about 5 minutes.
- Place 1/2 cup of the scallion rice into 4 serving bowls and top each with 1/4 of the garlic shrimp.
