Curried chicken salad sandwiches are a classic that is always welcome. With diced apples, walnuts and chopped shallots, this curried salad is the perfect meal (along with a K0 side) for a warm evening. Or make it ahead and pack it for lunch.

Ingredients
- 3 tablespoons fat-free sour cream
- 2 tablespoons reduced-fat mayonnaise
- 1 tablespoon fresh lime juice
- 1 1/2 teaspoons curry powder
- 1/2 teaspoon kosher salt or sea salt
- 1/4 teaspoon ground black pepper
- 8 ounces cooked boneless, skinless chicken breast
- 1 small apple, peeled, cored and diced
- 2 tablespoons chopped shallots
- 2 tablespoons chopped walnuts
- 4 slices multi-grain bread, toasted
- 8 Bibb lettuce leaves
- 1 cup alfalfa sprouts, optional
Instructions
- In a medium mixing bowl, combine the sour cream, mayonnaise, lime juice, curry powder, salt and pepper. Add the chicken, apple, shallots and walnuts and toss to mix well.
- Place a slice of bread on each of 4 plates and top each with a lettuce leaf. Spoon the curry mixture on the lettuce and top with the sprouts, if using.
