Open-Face Curried Chicken Salad Sandwiches

Curried chicken salad sandwiches are a classic that is always welcome. With diced apples, walnuts and chopped shallots, this curried salad is the perfect meal (along with a K0 side) for a warm evening. Or make it ahead and pack it for lunch.

  1. In a medium mixing bowl, combine the sour cream, mayonnaise, lime juice, curry powder, salt and pepper. Add the chicken, apple, shallots and walnuts and toss to mix well.
  2. Place a slice of bread on each of 4 plates and top each with a lettuce leaf. Spoon the curry mixture on the lettuce and top with the sprouts, if using.
