Ingredients
- 2 cups asparagus, cut into 1-inch pieces
- 3 cups egg substitute
- 2 cups 2% cottage cheese
- 2 cups grated low-fat cheddar cheese
- 5 green onions, thinly sliced
- 1/2 cup all-purpose unbleached flour
- 1 teaspoon baking powder
- salt, to taste
- ground black pepper, to taste
- 8 ounces smoked salmon, thinly sliced
- 8 slices whole-wheat bread
Instructions
- Bring a small pot of water to a boil. Add the asparagus, cook for 2 minutes, then transfer to a bowl of ice water. Drain and set aside.
- Preheat the oven to 325 degrees.
- In a large mixing bowl, mix together the cooked asparagus, egg substitute, cottage cheese, cheddar cheese, green onions, flour, baking powder, salt and pepper.
- Pour the mixture into a 9-inch-by-13-inch baking dish and bake for 20 minutes. Remove from the oven and stir, scraping down the edges towards the center. Sprinkle the smoked salmon over the mixture and stir to combine evenly.
- Return to the oven and bake for another 30 minutes or until set. Toast the bread. Remove the dish from the oven and cut into 8 pieces. Serve each piece with a slice of toast.

- Very tasty and easy to make. I added the salmon in with all of the ingredients in the beginning (vs cooking for 20 minutes before adding) and it still came out just fine.
