Tuna goes Italian in this artichoke-heart-and-caper-stuffed tuna sandwich. If you can’t find 2-ounce rolls (small hot dog buns are about the right size), substitute two slices of artisan bread instead.

Ingredients
- 1/4 cup reduced-fat mayonnaise
- 1 tablespoon capers, lightly chopped
- 2 cans (6 ounces eac white tuna packed in water, drained, drained
- 1 can (14 ounces) artichoke hearts in brine, drained and coarsely chopped
- 2 teaspoons lemon juice
- 1/4 teaspoon ground black pepper
- hot sauce, to taste
- salt, to taste
- 4 2-ounce rolls, split and toasted
- baby greens
Instructions
- In a medium bowl, combine all the ingredients except the rolls and greens and mix well. Line the bottoms of the rolls with greens and top with the tuna. Cover with the roll tops and serve.
