Ingredients
- 1/2 pound extra-lean ground beef (5% fat)
- 1/2 pound ground turkey breast (99% fat-free)
- 4 tablespoons fresh parsley, chopped, divided
- 3 teaspoons ground cumin, divided
- 2 teaspoons paprika, divided
- 1 teaspoon salt, divided
- 1/2 teaspoon ground black pepper, divided
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon extra virgin olive oil
- 1 large red onion, chopped
- 3 garlic cloves, minced
- 1 medium tomato, diced
- 1/2 5.5-ounce (156g) tomato paste
- 1 3/4 cup water, divided
- 1/2 cup white rice
- hot sauce, to taste
Instructions
- In a medium mixing bowl, combine both meats, 2 tablespoons of the parsley, 1 1/2 teaspoons of the paprika, 1 teaspoon of the cumin, 1/2 teaspoon of the salt, the garlic powder, onion powder and 1/4 teaspoon of the pepper. Mix well and shape into 24 one-inch balls; set aside.
- Warm the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 4 minutes. Stir in the tomato, tomato paste, 3/4 cup water, 2 tablespoons parsley, 2 teaspoons cumin, 1 teaspoon paprika, 1/2 teaspoon salt and 1/8 teaspoon pepper. Bring to a boil.
- Add the meatballs. Reduce the heat and simmer, covered, until the meatballs are cooked and the sauce has thickened, about 40 minutes.
- While the meatballs are cooking, prepare the rice. Bring 1 cup of water to a boil in a small pot; add the rice and salt to taste. Return to a boil, then reduce heat to simmer, cover and cook until done, about 30 minutes.
- To serve, place 1/2 cup rice onto each plate and top with 6 meatballs, dividing the sauce evenly. Spice up with hot sauce, if desired.

- Really good! Wonderful flavors. A little time consuming but makes an enormous amount so you have another meal for the family.
