Heather's Cinnamon Rolls

Our own Coach Heather came up with these, and they have been a Kinetix favorite ever since. Don't be scared by the time commitment, most of it is rising time.

  1. Heat the cottage cheese in the microwave on high power 30 seconds to 1 minute or in a small saucepan over medium heat, just until warm to the touch. Transfer to a large mixing bowl and stir in the yeast, water, sugar, butter, and egg. Stir until well mixed.
  2. In another bowl, whisk together 1 1/2 cups flour, the wheat gluten, Splenda and salt. Stir the flour into the wet ingredients, adding 1/4 cup at a time until it forms a stiff dough. Sprinkle the remaining 1/4 cup all-purpose flour on a cutting board and knead the dough until no longer sticky, about 5 minutes.
  3. Spray a large mixing bowl with nonstick spray and transfer the dough to the bowl. Cover with a clean kitchen towel and let the dough rise in a warm place until almost double in size, about 1 hour.
  4. Line a baking sheet with parchment. Roll the dough into a 12 by 16-inch rectangle. Mix together the cinnamon and splenda and sprinkle over the dough. Drizzle with the butter and arrange so long side is nearest you. Beginning with long side near you, roll up to form a 16-inch long log. Cut log crosswise into 8 rolls and place on the baking sheet cut sides up. Let rise 30 minutes.
  5. Preheat the oven to 350°F. Bake until nicely browned, about 12 minutes.
  6. While the rolls are baking, mix together the cream cheese, remaining Splenda, and vanilla for the frosting in a bowl or with an electric mixer. When rolls are done baking, remove from baking sheet and spread cream cheese frosting on top.

  • This is a great recipe! These are easy to snack on when you are on the go or on a quick break at work. Plus they satisfy any urge I have for the fatty,sugary starbucks pastries. I love the grainier flavor of these cinnamon rolls!

  • These are wonderful. I have made them a couple times now and have found I prefer less cinnamon then it calls. I use 1 tbsp of cinnamon instead of 2. I also have added a 1/4 tsp of orange extract and 3/4 vanilla extract and gives that frosting a kick. YUMMY

  • Heather's cinnamon rolls are the best! The final product is worth the time it takes to makes these. Next time I bake - I plan on making a couple batches of these. They do freeze well.

  • NOTE: Splenda and Stevia aren't interchangeable in terms of amounts. Stevia is much more potent. I'd use about 1/3 as much as indicated in the recipe.
