Simple Chocolate Pudding

Instructions

  1. Mix mixture, milk and protein powder according to pudding package.
  2. Divide into four parfait cups. Top each cup with the almonds.

  • definitely add the sea salt...just a pinch. make it fabulous...just sayin'. another thing i do is make 2 flavors...i fill half the cups halfway with one flavor (say, chocolate, maybe...?) & top off with another (say, cheesecake or butterscotch or banana or vanilla)...for you starbucks partners (& customers!) who enjoy a salted caramel hot chocolate, the butterscotch/chocolate fudge mix is close, with the pinch of salt..

  • Oh my lord, this was terrific. I tried a suggestion that jenmoore made to sprinkle on just a tiny bit of good quality sea salt on the top after it had chilled for about an hour to satisfy those cravings for salt/sweet/chocolate that hit every now and then. I also used the sugar-free chocolate fudge pudding mix for extra chocolatey goodness. One thing I did to try to avoid lumps was to mix the protein and pudding mix powders together with my whisk until they were thoroughly combined before adding the milk. Then I poured in the milk and whisked my arm off for the full two minutes referenced on the box. What a treat!

  • Seriously? Chocolate pudding?? I have to admit, I was skeptical about adding the soy powder - but, I think it actually improved the pudding. It was thick, rich, filling - and best of all, CHOCOLATE. My only complaint was that it was kinda lumpy... have to figure out how to fix that next time.

  • I'm sorry, but I thought this was awful. LIke chocolate cement. Maybe it was the kind of protein powder I used.

  • My wife and I have found that if you have Popsicle trays, these make incredible fudge pops. No change to the recipe but don't add the nuts. We actually make 8 K1 pops

  • My family loves this recipe! Sometimes I toast the almonds and throw in 4-5 mini marshmallows for Rocky Road Pudding. Or sub some toasted unsweetened coconut for half the almonds for Almond Joy Pudding. Pecans are really good too!

  • Very good - I feel like I just cheated! I added rainbow sprinkles to the top as well. Everything tastes better with rainbow sprinkles.
